Patience: 4 Years in Waiting - Awesome Grape Harvest - Jobe's Organics

I had an awesome harvest this year from the Catawaba grape vines. It took 4 years for the fruiting process to occur. In the Spring I dug out around the vines and put Jobe's Organics in the ring then mulched around the vine. I repeated the process through the season. Over 40 pounds of grapes from just two vines to start.

The natural yeast (white in color) on the skins will be used for the wild fermentation process in making a great wine from the harvest. The grapes are pressed by hand. I am not adding any additional yeast - hence wild fermentation in the way of the ancients is the process being used. I've added only organic sugar to the vat. Updates will come.
